Asparagus Chilled PDF Print E-mail

Asparagus
This is a really delicious side dish that's also great for your body.


Ingredients:

  • 1 bunch asparagus
  • 2 tbsp cilantro (fresh) chopped very small
  • 2-3 tsp red wine vinegar
  • 1 tsp olive oil

Rinse the asparagus clean and cut off about 1/4 inch off the back end of each stalk. Lay the stalks out flat, side by side in a teflon frying pan that has high sides. Fill the pan with water until it just barely covers the asparagus.

Run the burner on medium-high heat until they are aldante... slightly stiff. DO NOT overcook. They should not be allowed to cook until they become mushy.

Drain water and lay them out side by side on a plate.

Sprinkle all over with olive oil and vinegar (as if you sprayed them, not soaking) then scatter the cilantro all over.

Cover and chill before serving.
