Compote of Oranges PDF Print E-mail

Compote of OrangesThis delicious traditional Jewish dish is best made a day in advance making it perfect for preparation day (erev Shabbat).







Ingredients:

5 seedless oranges
1 cup sugar
1/3 cup brandy
2/3 cup Sabra or other orange liqueur
1/2 cup slivered toasted almonds

Preparation:

1.) Cut off the orange peel in slivers, removing as little of the white as possible. Boil the orange peel in water to cover for 5 minutes. Discard the water.

2.) Mix the sugar with 2 cups of water and simmer the peel until tender, about 30 minutes. Remove the peel. Boil the syrup down and add the brandy and the liqueur. Return the peel to the syrup.

3.) Slice the oranges, removing the pith, and put in a pretty crystal bowl. Add the peel and the syrup. Sprinkle with the slivered almonds. Chill.

Yield: 6 to 8 servings (P)
Tip: You can also decorate this with mint leaves.
