"We made the soup together, and we were amazed at how easy it was to make and how delicious it tasted. I think I'll continue sending him to school!" INGREDIENTS:- 2 pounds pumpkin, peeled and cut into chunks
- 1 carrot
- 1 onion
- 3 garlic cloves
- 4-5 cups water
- 3 tablespoons chicken soup mix (pareve)
PREPARATION:1. Cut the pumpkin, carrot and onion into cubes. 2. Place above vegetables and garlic in a soup pot. Add water and soup mix. 3. Bring soup to a boil and then simmer for 1 1/2 hours, until the pumpkin is soft. 4. In a food processor or blender, blend the vegetables from the soup with a bit of the liquid from the soup. 5. Return the soup to the pot. Add salt and pepper according to taste. SERVING SUGGESTIONS:Heat before serving. About.com
