This Mango Cream is a very quick and easy dessert to put together when you're running short on time.
Ingredients: 1 1/2 cups chopped ripe mango (about 2 mangoes) 1/4 cup orange juice 1 tablespoon lemon juice 1/3 cup confectioners' sugar Dash of salt 1 cup whipping cream, whipped Garnish (optional) Mango slices Mint sprigs
Instructions: Put chopped mangoes, orange and lemon juices, sugar, and salt in blender. Process until smooth. Fold into the whipped cream. Pour into individual serving dishes. Chill. Garnish with sliced mangoes and sprigs of mint, if desired. Makes 4 servings.
