Ingredients: 1/2 cup (1 stick/4 oz./125g) margarine 1/2 cup brown sugar 1 egg, beaten 1/2 tsp. vanilla extract or essence 1 cup self-raising flour pinch of salt 1 cup mixed dried fruit or dried dates
Instructions: In a small saucepan on low heat, melt margarine with sugar. Remove from heat. Add beaten egg, vanilla, flour and fruit. Mix well. Spread onto a greased baking tin and bake in 180 degree C/350 degree F oven for 20 minutes. Ice with lemon icing (optional) when cold and cut into squares. Makes 12 servings.
